The experience
You choose the broth. You cook at your own pace. Someone always fishes out the last beef ball and pretends they did not.
The room is built for that: comfortable booths, induction pots at every seat, and a self-serve area for vegetables, noodles and sauces so nobody has to wait. More than a meal, Otluk is a place where friends and family gather, share authentic Uyghur flavours, and create memories around every pot.
Come as two, come as ten, stay until we close at midnight.
Included with every soup base
Our sauce bar is not a row of squeeze bottles. Pick a base, stack aromatics, decide how much heat you actually want, then finish it. Try a combination here, then build the same bowl at the counter when you arrive.
This decides the texture. Sesame is thick and coating, soy and vinegar is thin and sharp.
Where the Uyghur kitchen shows up. Toasted cumin is the one most people miss.
Be honest with yourself. You can always go back for more.
A spoon of your own broth is the one thing that ties the whole bowl together.
Six bases, no packets
Every base is built in the kitchen from whole spices and simmered before service. One is included with all you can eat and with every combo. Ask for half and half and you get two.
The house signature. Uyghur cumin arrives first, warm and earthy, then the Sichuan heat catches up behind it.
Clear rendered chili oil rather than tallow. Numbing and bright, and it stays light over a long dinner.
The deep one. Beef tallow carries the spice further into everything you cook in it.
Gentle, savoury and completely mild. The half of the pot the kids and the grandparents fight over.
Clean and rounded, built to let seafood and greens taste like themselves.
Sweet, sour and bright red without any heat at all. The easiest base to put in front of a table that cannot agree.

The room on Oakdale Road, before the evening rush.

Culinary heritage
Uyghur cooking sits where Central Asia meets China: lamb and beef over pork, cumin and chili over sweetness, bread and noodles at the centre of the table.
Hot pot in this kitchen picks up the same habits. The cumin mala base is the clearest example, warm and earthy from cumin before the chili arrives. The stir-fried chicken with potatoes comes straight from the Uyghur home table.
Nobody eats Uyghur food alone, and nobody should eat hot pot alone either.
First time at a hot pot table
One base per pot, or split the pot down the middle and take two. This is the only decision that is hard to change later.
Meat, seafood, vegetables, noodles and handmade balls. On all you can eat the self-serve bar is unlimited, and meats are ordered separately.
Head to the bar and make your bowl. Most people make two: one nutty for beef, one sharp for seafood.
Thin beef takes eight seconds. Balls and root vegetables take a few minutes. Nothing is served to you already cooked, and that is the point.
